Apple Cinnamon Coffeecake Balls

Like a warm slice of apple-cinnamon coffeecake, in a no-bake, gluten-free, vegan ball. These protein-packed, cinnamony bites literally melt in your mouth. It's a good thing they're healthy, 'cause you can't stop at one. Great for breakfast, brunch, lunch, midday snacking, dessert, and as a late night treat - so plan to nibble on them ALL day long. Guilt free.

What's not to love about all those accolades? They're no bake, gluten-free, vegan, made with wholesome ingredients, and they taste like apple-cinnamon coffeecake!

Even if you're not gluten-free or vegan, you will adore these balls. They have hints of oats and almonds, laced with apples, and scented with vanilla and cinnamon. All the comforting ingredients, in a bite-sized treat.

Apple Cinnamon Coffeecake Balls

3/4 cup coconut oil
1/2 cup plus 2 tablespoons pure maple syrup
1/2 cup unsweetened applesauce 
1/4 cup almond butter, or any nut butter
1 teaspoon vanilla extract
1 cup oat flour
1 1/4 teaspoons ground cinnamon
Pinch of salt
1 1/2 cups quick-cooking oats

Combine the coconut oil and maple syrup in a large saucepan and set the pan over low heat. Cook until the coconut oil is melted and the mixture is smooth, stirring frequently. Remove the pan from the heat and whisk in the applesauce, almond butter and vanilla. Whisk in the oat flour, cinnamon and salt. Fold in the oats. 
Transfer the mixture to a bowl and chill until firm enough to shape into balls, about 1 hour.
Use about 1/2 tablespoon of the batter for each ball and shape the batter into about 45-50 balls. Transfer the balls to a parchment or foil-lined baking sheet. Chill until firm (this only takes 5 to 10 minutes). 
Store leftovers in an airtight container, in the refrigerator.
Makes about 45-50 balls
