Two Ingredient Pesto Marinara with Linguine and Burrata

Tangy tomato sauce and basil pesto - a match made in culinary heaven. The sauce is zingy and the pesto is brimming with basil, garlic, parmesan, and pine nuts. And when you slice into that buttery burrata and the cream melts into the sauce... it's pure bliss. I promise, this is the silkiest, most exquisite meal ever. With just four ingredients!

And you need just two ingredients for the sauce! Can't get easier than that! In case you're unfamiliar with burrata: Although it looks like a ball of mozzarella, it's not mozzarella. It's its own, very special type of Italian cheese. Burrata has a solid outer curd made from fresh mozzarella (either from cow or water buffalo milk), formed into a hollow pouch and filled with soft curd and fresh cream. The exterior is chewy, like fresh mozzarella, and the filling is milky, buttery and rich. It a nutshell, it's one of the best things ever. Burrata can be a little pricy (when it's not on sale), so I've given you the option of using 2 or 4 balls. The recipe serves 4, so you can choose whether folks get their own burrata, or they split one. It's a decent amount of cheese, so one burrata for 2 people is really plenty. We just eat more than most people... 
Again, this recipe calls for 2-4 balls of burrata cheese. In my house, we each eat one ENTIRE ball of cheese. So 2 balls serves 2! That said, 1/2 cheese ball is probably sufficient! Also, for the ultimate, creamy experience, let the burrata balls come to room temperature before serving. That softens the cream inside so it melts out and into the savory sauce.

Two Ingredient Pesto Marinara with Linguine and Burrata
Note: Pull the burrata cheese from the refrigerator 3o-60 minutes before serving. 

12 ounces linguine or pasta of choice
2 cups tomato sauce, from a carton or can
1/4 cup prepared basil pesto
Salt and ground black pepper
2-4 balls burrata cheese, room temperature
Chopped fresh parsley for serving, optional
Crushed red pepper flakes for serving, optional

Cook the pasta according to the package directions.
While the pasta cooks, combine the tomato sauce and pesto in a large skillet. Whisk to combine. Set the pan over medium heat and bring to a simmer. Reduce the heat to low and simmer for 10 minutes. Fold in the pasta and toss to coat. Season to taste with salt and pepper. Nestle the burrata on top of the pasta and sauce and sprinkle the parsley over top.
Serve with red pepper flakes on the side.
