3 Ingredient Chocolate-Dipped Vanilla Cream Cookies

The ultimate quick-and-easy treat! Mini vanilla cookies, sandwiched with whipped cream and dunked in melted chocolate. I mean, what's NOT awesome about that scenario? Keep a stash of these crunchy treats in your freezer and you'll always be prepared for sweet cravings and unexpected guests!

I made these as a last-minute dessert for the boys and they were a HUGE hit. I'm sure they thought I spent tons of time on them, but they came together in about 2 minutes, and then froze in just 15. You can set them up before dinner and they'll be ready for dessert!

Plus, it's great to have a frozen sweet treat on hand - you never know when you'll need them for unexpected visitors and dinner parties!

Although there is a "recipe" written below, you barely need one. Fact is, you can make ONE cookie, or 101 cookies! For each cookie sandwich, you'll need two vanilla cookies, about 1 tablespoon of whipped cream and about 2 tablespoons of melted chocolate. I've given instructions for 12 sandwich cookies; feel free to double or triple the recipe so you can freeze the extras or pass them out to happy friends and family.

3 Ingredient Chocolate-Dipped Vanilla Cream Cookies

24 mini vanilla cookies (such as  Mini 'Nilla wafers)
1 1/2 cups whipped cream of choice (Reddi Whip and Cool Whip both work find)
1 cup semisweet chocolate chips or melting wafers

Arrange 12 cookies, flat-side up, on a large baking sheet. Top each cookie with about 1 tablespoon of whipped cream. Top the whipped cream with the second cookie. Transfer the baking sheet to the freezer and freeze until firm, about 10 to 15 minutes.
Melt the chocolate in a small saucepan over low heat, or in the microwave, checking and stirring every 30 seconds.
Dunk the cookie sandwiches into the melted chocolate, covering half of the sandwich. Return the cookies to the baking sheet to set (either on the counter, or the fridge or freezer).
Store leftovers in an airtight container in the freezer.
