Which cake mix and frosting should you use? Whatever floats your boat! I used vanilla cake mix and vanilla frosting. You could do chocolate cake and chocolate frosting, chocolate cake and vanilla frosting, vanilla cake and strawberry frosting, lemon cake and rainbow frosting, and so on! How could you possibly go wrong with a cake pop???
These are great for parties - whether it's a kid's birthday or adult get-together. Everyone loves them! And, since you can make them well in advance (up to 3 days), you can check "awesome dessert" off your list long before the festivities get rolling.
Easy Cake Pops
1 box cake mix of choice, plus ingredients required to make one cake
2/3 cup frosting of choice, plus more if needed
Cake pop sticks (about 36-40)
2 cups dark chocolate chips or melting wafers (you can also use milk and white chocolate)
Colored sprinkles
Prepare the cake according to the package directions. When cool enough to handle, crumble the cake into a large bowl. Add the frosting and work the frosting into the cake crumbs with your hands, until you can shape the mixture into balls. If you need to add a little more frosting, do so, about 2 tablespoons at a time. Shape the mixture into golf ball-size balls, making about 36-40 balls. Insert a cake pop stick into the center of each ball.
Transfer the balls to a foil- or parchment-lined baking sheet and freeze until firm, about 1 hour.
Melt the chocolate in a small saucepan, or in the microwave, checking and stirring every 30 seconds.
Dip the cake pops in the chocolate, covering the entire ball. Allow excess chocolate to drip off. Hold the cake pop in one hand, and use the other hand to sprinkle the pop with sprinkles. Return the cake pops to the baking sheet to set.
Refrigerate until ready to serve. Store leftovers in an airtight container in the refrigerator.
