Seriously... how can you NOT freak out over blondies with candy? What I love about blondies... let me count the ways. They're chewy and almost butterscotchy (that's not a word, but you know what I mean). Thanks to the brown sugar, there's a caramel flavor going on. Plus hints of vanilla. Blondies are terrific as is, but when you add chocolate chips and candy, they're transformed into a next-level kinda treat. Maybe a few levels up.
And, I added regular M&M's this time, but any chocolate candy will do (and think about the possibilities with leftover Halloween candy)!
Chocolate Chip Blondies with M&M's
Cooking spray
1 1/2 cups all-purpose flour
1 teaspoon baking powder
1/2 teaspoon salt
3/4 cup unsalted butter (12 tablespoons or 1 1/2 sticks)
1 1/4 cups packed light brown sugar
2 large eggs
2 teaspoons vanilla extract
1/2 cup semi-sweet chocolate chips
1/3 cup M&M's
Preheat the oven to 350 degrees. Coat a 9-inch square baking pan with cooking spray. Line the pan with parchment paper and spray the parchment paper with cooking spray. Set aside.
In a small bowl, combine the flour, baking powder and salt. Mix well with a fork and set aside.
Melt the butter in the microwave or small saucepan over low heat. Whisk in the brown sugar until blended and smooth (if you melt the butter in a saucepan, remove the pan from the heat before adding the sugar).
Let the butter-sugar mixture cool for a few minutes. Whisk in the eggs and vanilla. Whisk in the flour mixture. Fold in the chocolate chips.
Spoon the mixture into the prepared pan and sprinkle the M&M's over top.
Bake for 24 to 28 minutes, until the top cracks slightly and a wooden pick comes out clean or with moist bits clinging to it.
Cool the pan on a wire rack before cutting into squares.
Makes 12-16 blondies
