One Pan Cheddar-Ranch Chicken and Potatoes

Raise your hand if you've had cheddar-sour cream potato chips. How about ranch potato chips? OK, imagine if those two chips had a baby, but the offspring was a complete/healthy meal of chicken, potatoes and cheddar cheese. I know, it's insane. Experience my insanity and make this incredible meal. You need one pan and about 30 minutes. That's even more ridiculous; just the way I like it.

I don't know about you, but one-pan meals make me happy. Like dance-around-the-kitchen kinda happy. But those meals also need to deliver exceptional flavor and texture. Sure, it's great when everything comes together at once. Throwing chicken and potatoes on a sheet pan is easy. Even my Puggle Hank could do it (actually, never mind). But, the BEST one-pan meals involve some forethought. They factor in taste and color. They utilize flavors that work well together, cook well together, and make it to the finish line as if you paid extra-special attention to EACH individual ingredient. This is that dish.
I mean, look at this skillet of yum! The chicken is golden brown and moist, the potatoes are tender in the middle and crisp around the edges, and everything screams RANCH, a flavor that resonates with all of us. Especially those of us that can't seem to grown up. lol

Oh, and that blanket of cheddar cheese... Never disappoints.

And you need just 5 ingredients!

One Pan Cheddar-Ranch Chicken and Potatoes

1 pound boneless skinless chicken breasts, cut into bite-size pieces
1 pound small potatoes, cut into wedges
2 tablespoons olive oil
1/4 cup powdered ranch dressing or ranch dip mix
1/2 cup shredded cheddar cheese

Preheat the oven to 400 degrees. Coat a shallow roasting pan or oven-proof skillet with cooking spray.
In a large bowl, combine the chicken and potatoes. Add the olive oil and toss to coat. Add the ranch mix and toss to coat. Transfer the mixture to the prepared pan and season with salt and pepper.
Roast for 25 minutes. Top the chicken and potatoes with the cheese and return the pan to the oven. Roast for 5 to 10 more minutes, until the chicken and potatoes are golden brown and cooked through and the cheese melts.
