Everything Bagel Roasted Zucchini with Parmesan

This is so awesome!! Tender-crisp zucchini, speckled with the amazing flavor and crunch of garlic, onion, sesame seeds, poppy seeds, and salt, and roasted until golden. So fabulous, and you need just 4 ingredients!

This was a total impulse recipe. I saw "everything bagel" seasoning in the spice aisle and snatched it right up! Has it always been there? Was I more observant that day? Either way, I'm incredibly glad I stumbled upon it. Everything bagel seasoning is a crunchy, savory blend of dried onion and garlic, white and black sesame seeds, poppy seeds, and salt. It's a one-stop-shop for tons of flavor and texture.  And it partners perfectly with sweet summer zucchini and nutty parmesan cheese. I bet it would be amazing on roasted carrots too...

Everything Bagel Roasted Zucchini with Parmesan

2 medium zucchini, cut into wedges (about 16 wedges per zucchini)
1 tablespoon olive oil
1 tablespoon everything bagel seasoning
1 tablespoon grated parmesan cheese

Preheat the oven to 400 degrees.
Combine the zucchini and olive oil in an ovenproof baking dish or on a foil-lined baking sheet. Toss to coat. Add the everything bagel seasoning and parmesan cheese and toss coat.
Roast for 15 to 20 minutes, until golden brown.
