If you've never massaged your kale before, get started today. Why? Because massaging the leaves softens and sweetens them. Kinda like we all feel after a good massage. Rubbing the leaves also turns that blue-gray-green color into a more vibrant green. If you don't believe me, set one leaf aside and compare things after the massage. I'm reasonably confident you'll be massaging kale from this day forward.
1 bunch fresh kale
Salt and ground black pepper
2 tablespoons olive oil
1 1/2 tablespoons balsamic vinegar
1/2 cup chopped cucumber
1 tomato, chopped
3-4 tablespoons crumbled feta cheese
Rinse the kale and pat the leaves dry. Remove the thick stems and chop or tear the kale leaves into bite-size pieces. Transfer the kale to a large bowl and add the olive oil, 1/2 teaspoon salt and 1/4 teaspoon black pepper. Using your hands, massage the oil into the leaves. Massage for a least 2 minutes, until the leaves are glossy and soft. Add the balsamic vinegar and toss to coat. Season to taste with salt and pepper.
Transfer the kale to a serving dish and top with the cucumber, tomato and feta.
