Easy Sauteed Spinach with Onion, Garlic and Parmesan

Isn't it fabulous when you find yourself super fired-up about a vegetable side dish? This is one of those times. Buttery spinach, dotted with golden bits of onion and garlic, tossed with nutty/sharp parmesan cheese. Five ingredients, bellowing with flavor, and on the table in about 10 minutes.

I don't know about you, but the combination of quick+easy+delicious always makes me swoon. And this spinach dish delivers on all those fronts. And that flavor - it's HUGE. When I served this to the boys, Luke said, "Wow, yum", and Kyle said, "This is really tasty". Remember, this is from kids who have had their share of mom's veggies.

Easy Sauteed Spinach with Onion, Garlic and Parmesan

1 tablespoon butter
1/2 cup minced onion
2 cloves garlic, minced
10 ounces fresh baby spinach leaves, or frozen spinach, thawed
2 tablespoons grated parmesan cheese
Salt and ground black pepper

Heat the butter in a large skillet over medium-high heat. Add the onion and cook for 5 minutes, until golden brown, stirring frequently. Add the garlic and cook for 30 seconds. Add the spinach and cook for 2 to 3 minutes, until the leaves are wilted, stirring frequently to move the uncooked spinach from the top to the bottom. Stir in the parmesan cheese. Remove from heat and season with salt and pepper.
