Zucchini Pizza Shooters

 
All the flavors of pepperoni pizza, nestled into zucchini shots! Tender-crisp zucchini, tangy sauce, gooey cheese, smoky pepperoni, and floral oregano - all in one handy little bite! You want this; and you can have it in about 20 minutes.

And you need just 5 ingredients! Choose your favorite pizza or pasta sauce, shredded mozzarella, a handful of pepperoni slices, and little oregano from your spice rack and you’ve got everything you need. Don’t want to stop there? Add olives, onions, bell peppers… the possibilities are endless.

Oh, and how about gluten-free? All day long my friend.

Zucchini Pizza Shooters

Cooking spray
2-3 small zucchini, cut crosswise 1-inch long, cylinder-shaped pieces
1/2 cup marinara sauce or pizza sauce of choice
1/2 cup shredded mozzarella cheese
6-8 slices pepperoni, chopped or sliced into wedges
1/2 teaspoon dried oregano

Preheat the oven to 375 degrees. Spray a large baking sheet with cooking spray.
Using a small spoon, scoop a little (about 1/2-inch) of the zucchini flesh from each piece, making a “cup”; don’t scoop too much - you don't want to waste any of this awesome veggie.
Arrange the pieces on the prepared pan and spoon about 1/2 teaspoon of the sauce in the center of each cup. Top with the mozzarella, pepperoni, and oregano.
Bake for 10 minutes, until the cheese melts and the zucchini is crisp-tender. Serve warm or room temperature.
