One Pot Fudgy Brownies with Chia Seeds!

Oh my gosh! Words can't describe these phenomenal brownies. So incredibly moist, with specks of chia seeds coursing through that fudgy middle. Every bite melts in your mouth while delivering a delicate, nutty crunch. I turned by back for 1 minute and this entire batch was gobbled up.

So let that be a warning - these are seriously addictive so if you want seconds, grab two brownies the first time around.

One Pot Fudgy Brownies with Chia Seeds!

Cooking spray
1/2 cup (1 stick) unsalted butter
1/2 cup unsweetened cocoa
1 cup granulated sugar
2 large eggs
1 teaspoon vanilla extract
1/3 cup all-purpose flour
1/4 cup chia seeds
1/4 teaspoon salt

Preheat oven to 325 degrees. Line an 8-inch square baking pan with parchment paper (allow the parchment paper to come up 2 sides of the pan for easy removal of the brownies). Spray cooking spray all over the parchment paper, and spray any part of the pan not covered by the paper.
Melt the butter in a large bowl (preferably stainless steel) set over a saucepan of simmering water. Whisk in the cocoa. Remove the bowl from the heat and whisk in the sugar.
Whisk in the eggs, one at a time. Whisk in the vanilla. Whisk in the flour, chia seeds and salt.
Pour the batter into the prepared pan. Bake for 20 to 25 minutes, until a wooden pick inserted near the center comes out clean or with little moist crumbs clinging to it.
Cool completely on a wire rack before cutting into 12-16 brownies.
