Garlic Parmesan Roasted Chicken with Easy Marinara

Perfectly moist chicken, with crunchy bits of garlic and parmesan on top, perched over wavy noodles and the best marinara sauce ever. A carnival of flavors, ready in less than 30 minutes.

This chicken - it's insanely good and ridiculously easy. In fact, I think you'll be making it over and over again (even without the sauce and pasta). High protein, low-fat, the perfect meal for Whole 30, paleo and gluten-free diets. If you're not eating dairy, sub vegan parmesan cheese for regular.

And this sauce, it's my favorite marinara ever. I definitely make it at least once/week. And if don't make it fresh, I pull some from the freezer, where it always lives. I suggest you do the same - you'll totally dig it.

About the garlic on the chicken: It's not garlic powder. It's dried minced garlic, which is a dehydrated, flaky, toasty version of garlic that I worship. It's nutty and smooth, not pungent, and it adds the most fabulous garlic essence to every dish it meets. Minced garlic is sold in the spice aisle next to the other garlic products.

Garlic Parmesan Roasted Chicken with Easy Marinara

12 ounce pasta of choice (I used tagliatelle)
4 boneless skinless chicken breast halves, patted dry
2 teaspoons dried minced garlic
Salt and ground black pepper
1/4 cup grated parmesan cheese, plus more for serving
2 cups tomato sauce (from a carton or can)
1 teaspoon Worcestershire sauce
1/2 teaspoon dried oregano
1/2 teaspoon dried basil
1/2 teaspoon garlic powder (or use the minced garlic)
1/2 teaspoon onion powder

Preheat the oven to 400 degrees. Line a large baking sheet with parchment paper or foil.
Place the chicken breasts halves on the prepared pan and season the top with salt and pepper. Sprinkle the minced garlic all over the top, about 1/2 teaspoon per chicken breast half. Top each piece of chicken with 1 tablespoon of the grated parmesan cheese. Roast for 20 to 25 minutes, until the chicken is browned and cooked through.
Meanwhile, cook the pasta according to the package directions and make the sauce.
To make the sauce, combine the tomato sauce, Worcestershire sauce, oregano, basil, garlic powder (or minced garlic), and onion powder in a medium saucepan. Set the pan over medium and bring to a simmer. Reduce the heat to low and simmer for 10 minutes.
Arrange the pasta on individual plates and top with the sauce and chicken. Serve the extra parmesan cheese on the side.
