White Chocolate-Almond Fudge with Vanilla Bean

Dreamy white chocolate fudge with flecks of vanilla bean in a blanket of melted white chocolate and sweetened condensed milk. Crunchy almonds add a whimsical, nutty snap to every creamy bite. Just 5 ingredients and one saucepan, and this can be yours any day of the week.

And talk about easy! Melt the chocolate and sweetened condensed milk, fold in the vanilla, pour into a pan and top with almonds. That's it. And, this fudge sets (in the refrigerator) in about 30 minutes, so you don't even have to wait that long to enjoy it!.

Note: This fudge doesn't completely harden; it's slightly chewy and exactly what fudge aspires to be.

White Chocolate-Almond Fudge with Vanilla Bean

12-ounce can sweetened condensed milk
2 cups white chocolate chips or white chocolate melting wafers
1 teaspoon vanilla extract
1/2 vanilla bean, seeds scraped from the pod and reserved
24 blanched almonds

Line and 8-inch square baking pan with parchment paper, allowing the paper to come up the sides (for easy removal of the fudge).
Combine the sweetened condensed milk and white chocolate in a medium saucepan and set the pan over medium heat. Cook until the chips melt and the mixture is smooth, stirring frequently. Stir in the vanilla extract and vanilla bean seeds.
Pour the mixture into the prepared pan and top with the almonds. Press the almonds in slightly.
Refrigerate until firm, about 30 minutes.
Cut into 12 to 16 pieces and serve. Store leftovers in an airtight container.
