Peanut Butter and Banana Cups with Chocolate Drizzle

Crispy wonton cups, filled with the perfect marriage of peanut butter and banana, glazed with warm apricot preserves, and then drizzled with melted dark chocolate. This quick-and-easy snack/dessert is THE ONE you've been waiting for. I have no doubt about that.

And I say that with the utmost confidence: This is the sweet treat you've been craving. It's equal parts healthy snack and sweet dessert. When I made these, I doubled the recipe and brought almost 100 cups to a high school track meet. I created the healthy little cups so the runners could eat them ANY time - before they race and after. The flour-based wontons and bananas would give them the low-fat, complex carbs they needed to run, and the peanut butter would supply the protein they needed for recovery. Just the right amount of carbs and protein; not too much. Like Goldilocks and the Three Bears... Despite the nutritional accolades, most kids just said, "Oh my God, these are amazing."

Note: This recipe makes 48 cups, which is great for entertaining or feeding a crowd. Feel free to cut the recipe in half if you just want 24 cups. Wrap the leftover wonton wrappers in plastic wrap and refrigerate for a future use.

1 package wonton wrappers (about 48 wrappers)
2/3 cup peanut butter
4-5 bananas
1/3 cup apricot preserves
1/3 cup semisweet chocolate
1 teaspoon shortening

Preheat the oven to 350 degrees.
Press the wontons into the bottom and up the sides of a mini muffin pan. Bake for 8 to 10 minutes, until the wontons are golden brown and crisp.
Cool completely.
Spoon about 1/2 teaspoon (or more if desired) into the bottom of each wonton cup. Slice the bananas into rounds and place one slice into the center of each cup.
Warm the apricot preserves in the microwave for 30 seconds (this makes it easier to brush on the bananas). Brush the preserves all over the banana slices.
Melt the chocolate and shortening together in the microwave until the chips soften, checking and stirring every 30 seconds. Stir until the mixture is smooth and glossy. Use a fork to drizzle the chocolate over the cups.
Let stand until the chocolate is set.
Store leftovers in an airtight container.
