Blown away! These taquitos are SO incredible and SO easy to make! They're crunchy, cheesy, and insanely flavorful thanks to store-bought taco seasoning. Oh, and this version is BAKED, so they're MUCH healthier than their deep-fried, freezer-shelf cousins!
Yes, I realize that corn tortillas are more traditional for taquitos, but burrito-size flour tortillas roll into tight rolls without cracking, and they bake up just as crisp and wonderful as their fried, corn tortilla brethren.
And get this: I have a super awesome way to hold these taquitos together WITHOUT using wooden picks. It's a simple process of melting the cheese a little first, before you roll up. Two minutes in a 300-degree oven is all you need - the cheese melts and the tortillas are still soft enough to roll up. Easy breezy. Oh, and don't worry, they're not too hot to touch either.
The best part about the sour cream drizzle is this: You can make it as spicy as you desire. That way, if you're feeding kids, or others that prefer milder flavors, you can serve the spicy sour cream on the side!

Baked Cheese Taquitos Spicy Sour Cream
4 burrito-size flour tortillas
2 cups shredded Mexican cheese blend
Cooking spray
Taco seasoning of choice (about 1-2 teaspoons)
1/3 cup sour cream or yogurt
1-2 teaspoons hot sauce of choice
Suggested toppings:
Salsa or picante sauce
Fresh cilantro leaves
Diced avocado
Chopped green onions
Preheat the oven to 300. Line a large baking sheet with parchment paper or foil.
Slice off the rounded sides of each burrito, making four 8x8-inch squares (it doesn't have to be exact). Quarter each square, making 4 smaller squares, about 4x4-inches each.
Arrange the squares on the prepared pan in a single layer (use 2 pans if needed). Top the squares with the cheese, about 2 tablespoons per square. Transfer pan to the oven and bake for 1 1/2 to 2 minutes, just until the cheese melts.
While the tortillas are still warm, roll up tightly and return the rolls to the baking sheet.
Increase the oven temperature to 350 degrees.
Spray the taquitos with cooking spray and season with the taco seasoning.
Transfer the taquitos to the oven and bake for 7 to 10 minutes, until the tortillas just start to turn golden brown.
Meanwhile, whisk together the sour cream and hot sauce. Transfer the taquitos to a serving plate and drizzle the sour cream mixture over top. Top with desired toppings.
