Three Cheese Burrito Quesadilla

Three cheeses, three unique flavors, one killer quesadilla. Sharp cheddar, milky mozzarella and salty cotija - all invited to this quesadilla dance. And thanks to thinner, burrito-size tortillas, you get the perfect ratio of tortilla-to-cheese in every bite.

And talk about easy! Two cheeses and taco seasoning on the inside, taco seasoning and one cheese on the outside! Start to finish, you can have these on the table in less than 15 minutes!
About the taco seasoning: I'm referring to the powdered variety here. You know, the stuff you use with a pound of ground meat? Any brand works. If you want to create your own seasoning blend, combine 3/4 teaspoon chili powder, and 1/4 teaspoon each ground cumin, dried oregano, onion powder, and garlic powder. Then season the quesadilla with salt and pepper - inside and out.

Cooking spray
4 burrito-size flour tortillas
1 cup shredded sharp cheddar cheese
1 cup shredded mozzarella cheese
1 teaspoon taco seasoning of choice, plus more for sprinkling over top (see note above)
1/4 cup crumbled cotija cheese
Chopped green onions for serving, optional

Coat a large stovetop griddle, grill pan or skillet with cooking spray and preheat to medium. Arrange the burritos on the hot pan and top one side of each one with 1/4 cup each cheddar and mozzarella. Sprinkle 1/4 teaspoon of the taco seasoning over the cheese and fold over the tortilla to cover the filling. Spray the surface with cooking spray and sprinkle with a little more taco seasoning.
Cook for 2 to 3 minutes, until the cheese starts to melt and the bottom is golden brown. Flip and cook for 2 to 3 minutes, until the bottom is golden brown. Serve with crumbled cotija cheese and green onions over top.
