Roasted Brussels Sprouts with Bacon and Crispy Onions

Caramelized Brussels sprouts with smoky bacon and crispy fried onions. I'm pretty sure that says it all. But, in case you need more tempting, the Brussels sprouts are sweet and crisp on the outside and tender and buttery on the inside, the bacon is smoky and salty and the fried onions deliver a scintillating crunch. It's a taste and textural whirlwind that's ready in less than 30 minutes and made with just 4 ingredients!

Are you more tempted now? Great, that was my goal. Seriously, this side dish couldn't be easier to prepare, but flavors skyrocket off the baking sheet. The salty bacon partners perfectly with the sprouts and the fried onion garnish nails it at the end.

The best part is, it's a sheet pan recipe, so there's no tending to a skillet on the stovetop!

Roasted Brussels Sprouts with Bacon and Crispy Onions

1 1/2 pounds Brussels sprouts, ends trimmed and halved through the core
3 slices bacon, diced
2 tablespoons olive oil
Salt and freshly ground black pepper
Crispy fried onions for serving (about 1/3 cup)

Preheat the oven to 400 degrees. Line a large baking sheet with parchment paper or foil.
In a large bowl, combine the Brussels sprouts, bacon, oil, 1 teaspoon salt, and 1/2 teaspoon black pepper. Toss to combine.
Transfer the mixture to the prepared baking sheet and spread out in an even layer. Roast for 25 to 30 minutes, until the Brussels sprouts are tender and browned and the bacon is chewy and crisp, stirring halfway through cooking. If desired, season to taste with salt and pepper.
Transfer to a serving plate and top with the crispy onions.
