Skillet Sloppy Joes

Talk about a skillet full of joy! Oh my gosh... this meal was insane! Sloppy Joe sandwiches are pretty awesome anyway, but when you nestle the soft rolls right in the skillet with the savory beef mixture, they get toasty on the bottom and warm all over. Warm all over is good.

I had such a blast serving this for dinner! First, it makes a striking presentation - all eyes POP when you set a meal like this down on the table. And second, it's the EASIEST and most delicious way to serve sloppy joes. I used a big spoon to bring each sandwich from the skillet to the plate (and the spoon went back in for a little extra filling...). After dinner, I had ONE pan to clean!

I feel pretty confident saying that my sloppy joe mixture is one of the best on the planet. I've played around with ingredients (for like 20 years!) and this version is, BY FAR, the best. Just enough ketchup to add sweetness and tang. Just enough Dijon mustard for a little pungency. Hints of Worcestershire sauce, chili powder, onion, garlic, basil, and oregano (all pantry staples). And golden corn for a little textural contrast in every bite - savory beef, soft rolls, tender-crisp corn. Perfection on every level.

I have a feeling you'll be making this meal again and again (it's definitely part of our regular routine).

You can also make these sandwiches with ground turkey or chicken!

Skillet Sloppy Joes

1 pound lean ground beef
1 tablespoon chili powder
1 teaspoon dried oregano
1 teaspoon dried basil
1 teaspoon onion powder
1 teaspoon garlic powder
1/2 teaspoon salt
1/4 teaspoon ground black pepper
1 cup tomato sauce or tomato puree
1 cup ketchup
1 teaspoon Dijon mustard
1 teaspoon Worcestershire sauce
1/2 cup frozen corn, keep frozen until ready to use
4-8 soft rolls for serving (4 regular-size rolls/buns or 8 slider rolls)

Brown the beef in a large skillet over medium-high heat, breaking up the meat as it cooks. If necessary, drain away any fat and return the beef to the pan over medium-high heat. Add the chili powder, oregano, onion powder, garlic powder, salt, and pepper and stir to coat the beef. Cook for 1 minute, until the spices are fragrant. Add the tomato sauce, ketchup, Dijon mustard, and Worcestershire sauce and bring to a simmer. Reduce the heat to low and simmer for 10 minutes (you can cover the pan with a lid and simmer for an hour if you want). Stir in the corn and simmer for 5 minutes to heat through.
Nestle soft rolls into the skillet and serve!
