I LOVE making mug cakes. Especially on those nights when my boys say, "Did you make dessert?"; I can say, "No, but I can make mug cakes!" They always approve.
This version is insane. The chocolate cake is moist and rich, and the addition of hazelnut spread is spot on. Just a spoonful of Nutella (or your favorite hazelnut spread) in the middle completely transforms the cake. As the mug cakes cook in the microwave, the spread melts through to the bottom of the mug. That means you get both chocolate cake and fudgy Nutella in every LAST bite! My boys thought it was such a wonderful surprise to find more Nutella hiding in the bottom of the mug!
Which mugs should you use? Make sure your mugs are at least 12 ounces. The batter only fills about 1/2 of the mug, but it rises like crazy in the microwave.
Healthy Chocolate Mug Cakes with Nutella
1/2 cup all-purpose flour
1/2 cup granulated sugar
4 tablespoons unsweetened cocoa
1/2 cup Greek yogurt
1 large egg
2 teaspoons vegetable oil
1/2 teaspoon baking soda
1/2 teaspoon vanilla
Pinch of salt
2 teaspoons Nutella or chocolate-hazelnut spread of choice
In a medium bowl, combine the flour, sugar, cocoa, yogurt, egg, oil, baking soda, vanilla and salt. Whisk until blended. Pour the batter into 2 mugs (make sure they are at least 12-ounces each). Spoon 1 teaspoon of the Nutella on top.
Microwave on HIGH for 90 seconds (you can cook them one at a time).
Serve hot!
