When you think “French fries”, you think potato, right? Who made spuds the King of the fry? Turn outs, lots of delicious vegetables make great fries, and there’s no need to deep fry any of them. You just need one recipe (like this one for avocado fries), and then you have endless possibilities.
The recipe for these avocado fries is below. But check out other vegetables that make GREAT oven baked fries:
- Yukon gold and red potatoes: peeled or unpeeled; cut into wedges or fries
- Sweet potatoes and yams: peeled and cut into wedges or fries
- Zucchini and yellow squash: unpeeled and cut into rounds or fries
- Portobello mushrooms: stems removed; cut into thin strips
- Yellow onion: thinly sliced into 1/8-inch thick rounds
- Carrots: peeled and cut on a diagonal for oval pieces or cut into sticks for fries
- Butternut squash: peeled and cut into wedges or fries
Oven Baked Avocado Fries
3-4 ripe but firm avocados, halved, pitted, peeled and cut into 6-8 wedges each
1/4 cup all-purpose flour
1/2 teaspoon salt
1/4 teaspoon ground black pepper
1/4 teaspoon onion powder
3 large egg whites
1 cup seasoned dry bread crumbs
Cooking spray or olive oil
Preheat the oven to 400 degrees. Line a large baking sheet with parchment paper.
In a shallow bowl or dish, combine the flour, salt, pepper, and onion powder. Mix well. Place the egg whites in a separate bowl and the bread crumbs in a third shallow bowl or dish. Add the avocado wedges to the flour mixture and turn to coat. Transfer the avocado to the egg whites and turn to coat. Transfer the avocado to the bread crumbs and turn to coat. Transfer the breaded avocado to the prepared baking sheet, in a single layer. Spray with cooking spray or drizzle with olive oil.
Bake for 20 for 30 minutes, until golden brown and crisp.
