Sheet Pan Eggs in a Hole with Sheet Pan Hash Browns

Another recipe born out of my desire to make meal preparation as easy as possible! Rather than standing over the stove tending to eggs, bacon and hash browns, I let my oven do ALL the work!

For this recipe, I used my small baking sheet to make four eggs-in-a-hole. If I were serving more people, I would have used a large pan! Use the ingredients and pan you need to serve as many as you like.

For the bacon, you don't really need a recipe, so I'll address that first. Arrange strips of bacon on a parchment-lined baking sheet in a single layer. Bake at 400 degrees for 10 to 15 minutes, until you reach the desired level of doneness. Now for the eggs and potatoes...

The hash browns take longer, so start those first.

Sheet Pan Eggs-in-a-Hole with Sheet Pan Hash Browns

For the hash browns:
4 cups frozen hash browns, keep frozen until ready to use
3 tablespoons olive oil
1/2 teaspoon onion powder
Salt and ground black pepper
For the eggs-in-a-hole:
4 slices bread of choice
2 tablespoons butter
4 large eggs
Salt and ground black pepper

Preheat the oven to 350 degrees.
To make the hash browns, in a large bowl, combine the hash browns, oil and onion powder. Toss to coat. Spread the hash browns out on a large baking sheet (I like to line my baking sheet with parchment paper for easy cleanup). Season with salt and pepper.
Bake for 35 to 40 minutes, until the hash browns are golden brown, stirring every 10 to 12 minutes.
To make the eggs-in-a-hole, use a biscuit cutter or mouth of a jar to cut circles out of the center of each piece of bread. Set aside.
Place the butter in a small sheet pan (use one small enough to keep the bread slices close together if possible). Set the pan in the oven and bake until the butter melts (about 1 to 2 minutes).
Add the bread slices (and the circles you cut out - don't waste those!) to the butter and turn to coat. Arrange the circles around the slices of bread so they toast while the eggs cook. Break the eggs into the cut-outs in the bread. Season the top with salt and pepper.
Bake for 10 to 15 minutes, until the whites are cooked and the yolks reach the desired level of doneness.
Serve the eggs-in-a-hole with the bacon and hash browns!
