Pepperoni Pizza Bites

It's summer and the days are long and wonderful! And, if you have kids running around, you know they're hungry all the time. All that summertime action breeds kids with bottomless bellies! Here's a quick and easy snack you can whip up with a handful of pantry staples. And, by handful, I mean 4 ingredients! Tortillas, sauce, cheese, and pepperoni. And these bite-size treats are ready in about 10 minutes.

I made a dozen pizza bites for this batch, but if your kids have friends over and you need to serve more, simply double or triple the recipe as needed. You can also use larger, burrito-size tortillas and make bigger bites.
Perfect for after-school snacking too!

Pepperoni Pizza Bites

2 small flour tortillas (fajita-size) cut into 6 wedges each
3/4-1 cup pasta or pizza sauce
3/4-1 cup shredded mozzarella cheese
pepperoni slices, cut into 4 wedges each (if you use larger tortillas and the wedges are larger, don't bother slicing the pepperoni, just use whole slices)

Preheat the oven to 375 degrees. Line a large baking sheet with parchment paper.
Arrange the tortilla wedges on the prepared pan. Top with the sauce, cheese and pepperoni.
Bake for 5 minutes, until the cheese melts and the edges of the tortillas just start to turn golden brown. Serve hot, warm or room temperature. They will be devoured in seconds, so watch your fingers...
