Have chicken, need inspiration? I’ve got you covered with this amazing chicken dish. The glaze is a sticky, sweet and savory blend of honey, garlic, soy, and rice vinegar (plus a little dried basil) - all pantry staples. Get that chicken coated and let the oven do ALL the work, in about 30 minutes. Now that's what I call a winning recipe.
About the chicken: I used pieces of boneless, skinless chicken breasts (I cut each breast into 2 to 3 pieces). You can also use bone-in chicken breasts and thighs, just add about 10 minutes to the cooking time.
Roasted Honey-Garlic Chicken
2 teaspoons olive oil
1 pound boneless skinless chicken breasts, cut into 2 1/2-inch pieces
Salt and ground black pepper
1/2 teaspoon garlic powder or garlic granules
1/2 teaspoon dried basil
1/4 cup honey
2 teaspoons soy sauce
1 teaspoon rice vinegar
1 teaspoon minced fresh garlic
Chopped green onions for serving, optional
Preheat the oven to 400 degrees.
Place the olive oil in a bottom of a shallow baking dish or oven-proof skillet. Arrange the chicken on top of the oil and season with salt, pepper, garlic powder, and dried basil.
In a small bowl, whisk together the honey, soy sauce, vinegar, and fresh garlic. Spoon the mixture all over the chicken.
Bake for 25 to 30 minutes, until the chicken is browned and cooked through, spooning the sauce (and accumulated juices from pan) over the chicken chicken halfway through cooking.
