Kale Parmesan Crisps with Sun Dried Tomato Oil

Let me describe this taste/texture experience for you... The base layer is a crunchy toast square made of plain white bread that's been jazzed up with sun-dried tomato oil (yes, the oil from the jar of sun-dried tomatoes) and grated parmesan cheese. The top layer is crunchy roasted kale leaves that have also been tossed with sun-dried tomato oil. Golden brown, nutty toast, topped with crunchy, perfectly seasoned kale. A quick sprinkling of more parmesan cheese on top and this almost-too-pretty-to-eat appetizer is ready to serve!
Note: If you want to add a little chewiness to the crisps, and more sun-dried tomato flavor, add diced sun-dried tomatoes on top of the kale before the final bake.

Kale-Parmesan Crisps with Sundried Tomato Oil

1 bunch curly kale
3 tablespoons oil from a jar of oil-packed sun-dried tomatoes
Salt and ground black pepper
4 slices white or whole wheat bread
2 tablespoons grated parmesan cheese, plus more for sprinkling over top

Preheat the oven to 350 degrees. Line a large baking sheet with parchment paper.
Rinse the kale very well to remove dirt and debris and dry it completely. Remove the hard stem from each leaf and cut the leaves into 4-inch pieces (this doesn't have to be exact).
Place the kale in a large bowl and add 2 tablespoons of the sun-dried tomato oil. Toss to coat the leaves completely. Transfer the leaves to the prepared pan and spread out in an even layer. Season with salt and pepper.
Bake for 15 minutes, until the kale is crisp. Remove the pan from the oven and keep the oven at 350 degrees.
Cut the crusts from the bread and cut each slice into 4 pieces. Brush the remaining tablespoon of sun-dried tomato oil on the bread slices. Place the bread on a large baking sheet and sprinkle the parmesan cheese over top.
Bake for 5 to 7 minutes, until the bread is lightly toasted.
Remove the bread from the oven and top with the crisp kale. Sprinkle a little more parmesan cheese over top.
Bake for 3 to 5 more minutes to heat through.
Serve hot or room temperature.
