Healthy Flourless Chocolate Peanut Butter Cookies

It's not often you find a cookie recipe that starts with "Combine all ingredients...". These chocolatey peanut butter cookies are unbelievably awesome. They're slightly crisp on the outside, and perfectly moist on the inside. Plus, they have NO flour, NO added fat and barely any added sugar (just 1/3 cup to balance the unsweetened cocoa powder). In fact, the ingredient list is so pure and simple, I think you'll be floored.


And talk about easy! This is a dump-and-whirl recipe where the food processor does all the work (besides measuring...). That means you can enjoy these cookies in about 20 minutes!!!

About the sweetness: Note, these cookies are not overly sweet - they're about as sweet as your peanut butter (which I think is perfect). That said, if you want sweeter cookies, use 1/2 cup brown sugar instead of 1/3 cup.

Healthy Flourless Chocolate Peanut Butter Cookies

1 cup peanut butter of choice (I prefer natural)
1/3 cup packed light brown sugar, or 1/2 cup for sweeter cookies
3 tablespoons unsweetened cocoa powder
1 large egg
1 teaspoon baking soda
1 teaspoon vanilla extract

Preheat the oven to 350 degrees. Line 2 baking sheets with parchment paper or silicone baking mats.
Combine all ingredients in a food processor and process until the mixture comes together to form a dough.
Divide the dough into 20 equal pieces and shape each piece into a ball.
Arrange the balls on the prepared pans, about 2 inches apart. Gently press into each cookie with a fork, pressing it until about 1/2-inch thick. If you want crosshatch marks, press the fork in the other direction too.
Bake for 8 to 9 minutes, until the outside looks dry but the cookies are still soft to the touch.
Cool the cookies, on the baking sheets, on wire racks.
