Easiest, cheesiest snack ever. Made with tortillas, tomato sauce and two cheeses, you can get these gooey bites to the crowd in less than 20 minutes!
Want to add pepperoni? Go for it! Simply nestle the slices right in there with the cheese and sauce.
Mini Stuffed Pizza Wedges
Cooking spray
8 soft flour tortillas (I used fajita-size, but burrito-size works too)
1/2-3/4 cup pizza sauce or marinara sauce of choice
1 cup shredded mozzarella cheese, or more if desired
2 tablespoons grated parmesan cheese
Preheat the oven to 375 degrees. Line a baking sheet with parchment paper or coat with cooking spray.
Stack the tortillas and cut them into 8 wedges each (stacking them simply serves the purpose of cutting them all at once - a time-saver!)
Arrange half of the tortilla wedges on the prepared baking sheet and top with the sauce (about 1-2 teaspoons per wedge, depending on how saucy you like your pizza). Top the sauce with the mozzarella cheese. Arrange the remaining tortilla wedges over top and spray the surface with cooking spray. Sprinkle the parmesan cheese over top.
Bake for 5 to 10 minutes, until the tortillas are golden brown and the cheese melts.
Serve hot or room temperature!
