Parmesan Toasted Tortellini

This is one of our favorite dishes in my house. Quickly blanched, the tortellini are then tossed with olive oil and roasted under a blanket of freshly grated Parmesan cheese. Served with warm marinara sauce and eaten with our hands! Never fails!

Parmesan Toasted Tortellini

1 pound tortellini pasta (I prefer the refrigerated variety)
2 tablespoons olive oil
2 tablespoons grated parmesan cheese
Salt and freshly ground black pepper
1 cup marinara sauce for serving
Fresh basil leaves for serving, optional

Preheat the oven to 400 degrees. Line a large baking pan with parchment paper.
Cook the tortellini according to the package directions, stopping 1 minute before the suggested cooking time. Drain and transfer to a large bowl. Add the olive oil and toss to coat. Transfer the tortellini to the prepared pan and spread out in an even layer. Sprinkle the parmesan cheese over top. Season with salt and pepper.
Roast for 10 to 15 minutes, until the tortellini just start to turn golden brown. Chop or tear the basil leaves and sprinkle them over top.
Meanwhile, warm the marinara sauce in a saucepan or in the microwave. Serve the toasted tortellini with the warm marinara sauce on the side.
