Flourless Chocolate Cookies with Coarse Sea Salt

These chewy cookies are so fudgy, it's like a cookie married and brownie and they had a baby. And everyone loves this baby. Especially with the hint of crunchy sea salt on top - it perfectly balances the sweetness of the cookie.

These one-bowl wonders come together in just minutes, and there's no butter or oil! I'm not saying they're incredibly healthy - there's plenty of powdered sugar to go around...

Flourless Chocolate Cookies with Coarse Sea Salt

3 cups powdered sugar
1 1/4 cups unsweetened cocoa powder
Pinch of salt
3 large eggs plus 1 large egg white
1 1/2 teaspoons vanilla extract
1/2 cup mini semi-sweet chocolate chips
Coarse sea salt for sprinkling over top

Preheat the oven to 350 degrees. Line 2 to 3 large baking sheets with parchment paper.
In a large bowl, whisk together the powdered sugar, cocoa and and pinch of salt. Set aside.
In a separate large bowl, whisk the eggs and egg white together until blended. Whisk in the vanilla. Whisk in the powdered sugar mixture. Fold in the chocolate chips.
Drop the batter (it will be thin) onto the prepared baking sheets, about 2 inches apart (the batter will spread a little so you'll see that you need the space between cookies). Sprinkle the top with the coarse sea salt.
Bake for 10 minutes, until the cookies are crackly on top and chewy in the middle.
Slide the parchment paper onto wire racks and cool completely.
