Make-ahead friendly: As you probably know, things like chili and stews get better over time - because the flavors evolve and intensify. Sloppy Joes are no different. You can make this filling up to 2 days in advance and store it in the refrigerator. Reheat in a saucepan over medium heat (if you need to add a little extra liquid, add tomato sauce, tomato puree or beef broth; water works too).
Easy Sloppy Joe Sliders
1 pound lean ground beef
2 teaspoons chili powder
1 teaspoon dried oregano
1 teaspoon onion powder
1 teaspoon garlic powder
1/2 teaspoon salt
1/4 teaspoon ground black pepper
1 cup tomato sauce or tomato puree
1/2 cup ketchup
1 teaspoon Dijon mustard
1 teaspoon Worcestershire sauce
1/2 cup frozen corn, keep frozen until ready to use
8 soft slider rolls for serving
Brown the beef in a large skillet over medium-high heat, breaking up the meat as it cooks. If necessary, drain away any fat and return the beef to the pan over medium-high. Add the chili powder, oregano, onion powder, garlic powder, salt, and pepper and stir to coat the beef. Cook for 1 minute, until the spices are fragrant. Add the tomato sauce, ketchup, Dijon mustard, and Worcestershire sauce and bring to a simmer. Reduce the heat to low and simmer for 10 minutes (you can cover the pan with a lid and simmer for an hour if you want). Stir in the corn and simmer for 5 minutes to heat through.
Serve the mixture in soft slider rolls.
