Sheet Pan Quesadillas

Cheesy, taco seasoned and perfectly browned, these easy quesadillas are spot on (and spotless, which makes for easy cleanup)! You can make as many as you want, and they’re all ready at once, after just 10 minutes in the oven. Imagine how easy this would be for parties and feeding a crowd during football season and Netflix bingeing!!

Want a chicken or steak version? Great! Simply add cubed or shredded cooked chicken or diced steak on top of the cheese before sprinkling the taco seasoning over top. Shrimp would be amazing too!

Need to serve a crowd? This recipe uses 4 tortillas and creates 8 pieces. To serve more, simply double, triple or quadruple the recipe. Since everything is created on one sheet pan, they all come out of the oven at the same time - ready to serve!

Sheet Pan Quesadillas

4 soft flour tortillas (I used fajita size)
1 cup shredded cheddar cheese
1 cup shredded Monterey Jack or pepper jack cheese
2 teaspoons taco seasoning (any variety)
1 tablespoon olive oil
Salsa or picante sauce on the side for dipping

Preheat the oven to 400 degrees. Line a large baking sheet with parchment paper.
Arrange the tortillas on the parchment paper and top one half with both of the cheeses. Sprinkle the cheese with the taco seasoning. 
 Fold the tortillas over to cover the cheese and brush the top with the olive oil.
Place a second piece of parchment paper on top of the tortillas.
Place a second baking sheet over the tortillas, to weigh them down while they bake.
Bake for 10 minutes, until golden brown. 
Halve each quesadilla and serve with salsa or picante sauce. 
Serves 4 (2 pieces each)
