Fajita Roasted Potatoes

Golden brown, roasted potatoes with zesty fajita spices and cilantro. Why should chicken and steak have all the fun?

But let's be honest. It's almost unfair to call this a recipe. It's simply potatoes with olive oil, fajita seasoning and cilantro! Actually, what else do you need?

Fajita Roasted Potatoes

1 1/2 pounds red potatoes, cut into 2-inch pieces
2 tablespoons olive oil
2 tablespoons dry fajita seasoning (I used The Spice Hunter, but any variety works)
Fresh cilantro leaves

Preheat the oven to 425. Line a baking sheet with parchment paper.
Place the potatoes in a large bowl, add the olive oil and stir to coat. Add the fajita seasoning and stir to coat the potatoes.
Transfer the potatoes to the prepared baking sheet and spread out in an even layer (without potatoes overlapping).
Roast for 20 minutes, until the potatoes are golden brown and tender. Top with torn cilantro leaves before serving.
