White Chocolate Parfaits with Grahams and Chips

Confession - I cleaned out my fridge and pantry to make this dessert! Thankfully, I have a no-judgement-zone kitchen! I had one box of instant white chocolate pudding mix, some leftover Greek yogurt, 1/4 box of cereal, and a handful each of white and dark chocolate chips. Oh, and chocolate syrup - that's always in my fridge. A dessert was born! And then devoured.

Think about the possibilities: This recipe encourages endless variations - choose any flavor pudding and variety of cereal you want. You can also use crumbled cookies instead of cereal or graham cracker pieces (this is a great way to utilize the last few cookies in the bottom of the bag). Use Nutella or cookie butter instead of chocolate syrup. Add peanut butter chips. Seriously - have fun with this!

Two HUGE desserts or 4 normal ones: For this recipe, I chose to use larger mason jars (12 ounces) so I could make two big desserts for my cross country-running boys. You can make 2 large servings (in larger mason jars), or use smaller mason jars and make 4 servings.

White Chocolate Parfaits with Grahams and Chocolate Chips

2 cups nonfat Greek yogurt
1 package instant white chocolate pudding mix (4-serving package)
1 cup graham cracker cereal (such as Golden Grahams) or graham cracker pieces
1/4 cup chocolate syrup or Nutella
1/4 cup white chocolate chips
1/4 cup semisweet chocolate chips

In a mixing bowl, combine the yogurt and pudding mix. Mix on medium-high speed for 2 minutes, until smooth and creamy.
Spoon half of the pudding into the bottom of 2 large or 4 small mason jars. Drizzle half of the chocolate syrup over top, making sure to get the sides where you can see through the glass! Top with half of the cereal. Repeat layers - yogurt, chocolate syrup and cereal. Top with the chocolate chips. Serve or chill until ready to serve.

Makes 2-4 servings (depending on the size of the mason jars)
