Pepperoni Pizza Zucchini Shots

All the flavors of pepperoni pizza, nestled into zucchini rounds!

Choose your favorite ingredients: This is basically an assembly recipe, so choose your favorite marinara or pizza sauce, your favorite mozzarella (part-skim or or whole milk), and your favorite pepperoni (regular, turkey or soy). Do you like your pizza with black olives? Sausage? Onions? Add those too! The possibilities are endless.

These make a great side dish, but imagine how delighted your friends will be if you present them at a party!They're super easy to make, so you can make a HUGE batch.

Pepperoni Pizza Zucchini Shots

1 large or 2 medium zucchini, cut crosswise 1-inch thick rounds
3-4 tablespoons marinara sauce or pizza sauce (pick your favorite variety)
1/4 cup shredded mozzarella cheese, regular or part-skim
3-4 slices pepperoni, cut into 8 little wedges each
1 tablespoon grated parmesan cheese

Preheat the oven to 425 degrees. Line a large baking sheet with parchment paper or foil.
Using a small spoon, scoop a little of the zucchini flesh from each round (not too much - you don't want to waste any of this awesome veggie).
Arrange the rounds on a the prepared pan.
Spoon the sauce into the rounds (about 1 teaspoon each) and then top with the mozzarella and pepperoni. Sprinkle the parmesan cheese over top.
Bake for 10 to 15 minutes, until the cheese melts and the zucchini is crisp-tender.
