Hot Dog-Cheddar Roll-Ups

A winning combination of hot dogs, cheddar cheese and jalapenos - rolled into flour tortillas and baked to perfection! Bite-size heaven if you ask me! Oh, and an excellent use of leftovers (2 extra hot dogs, a few tortillas, leftover cheese - clean out the fridge!). 

When to serve? I made these as an after school snack, but they would make a fabulous party appetizer.

Ketchup or mustard? I realize there are die-hard fans on both sides of the aisle so I added a little of both! You can choose one or the other, or neither! However you roll... get it? As in "roll-up"? I know, cheesy... 

About the hot dogs: I used regular hot dogs for these and cut them into bite-size pieces - first in half horizontally, and then into 2-inch pieces. You can also use cocktail sausages or mini hot dogs. 

Hot Dog-Cheddar Roll-Ups 

3 small (fajita-size) soft flour tortillas
Ketchup
Mustard
12 thin slices cheddar cheese (wait to slice the cheese until you see how wide your tortilla strips are)
2 hot dogs, halved horizontally and then cut into 2-inch pieces, or 12 cocktail sausages or 12 mini hot dogs
1 jalapeno pepper, halved lengthwise, seeded and cut into 1/4-inch thick slices  
Cooking spray

Preheat oven to 375 degrees. Coat a large baking sheet with parchment paper. 
Slice thin strips from the sides of each tortilla (to remove the rounded edges), making 3 squares. Slice the squares into 4 strips each. 
Place a dot of ketchup and mustard in the center of each strip. Top with a slice of 
cheese. Place one piece of hot dog crosswise on each strip and roll up. Place a jalapeno slice on top and secure with a wooden pick. 
Place the roll-ups on the prepared pan and spray with cooking spray. 
Bake for 10 to 15 minutes, or until the tortillas just start to turn golden brown.
Makes 12 roll-ups
