Garlic-Parmesan Roasted Potatoes with Basil

In my opinion, you can never have enough roasted potato recipes. Especially the easy ones. This recipe is super simple and brimming with flavor - not just from the garlic, parmesan and basil, but from the caramelization that happens in the oven.

I also love that it's a pop-in-the-oven and forget it dish, leaving you to tend to other things!

Garlic-Parmesan Roasted Potatoes with Basil

2 pounds small red potatoes, cut into wedges
2 tablespoons olive oil
2-3 cloves garlic, minced
1/2 teaspoon paprika
1/2 teaspoon salt
1/4 teaspoon ground black pepper
1/4 cup shredded parmesan cheese
2 tablespoons minced fresh basil

Preheat the oven to 400 degrees.
Place the potatoes in a large bowl and add the oil, garlic, paprika, salt, and pepper. Toss to coat. Spread the potatoes out on a baking sheet in a single layer, cut side up.
Roast for 35 minutes, until browned and crisp on the outside and tender on the inside.
Transfer the potatoes to a bowl and toss with the parmesan cheese. Return the potatoes to the baking sheet and bake for 5 to 10 more minutes, until the parmesan is golden brown.
Toss with the basil and season with salt and pepper before serving.
