Garlic Lime Rice with Basil

This is probably one of the easiest side dishes ever. But, it's crammed with flavor thanks to garlic, lime and basil! I served this as a side dish with my Chicken Taco Salad, but it would be great with any main dish!

Garlic Lime Rice with Basil

2 teaspoons olive oil
2-3 cloves garlic, minced
1 cup long grain white rice
2 cups chicken broth or water
1 lime, juice and zest
1-2 tablespoons torn or chopped fresh basil leaves
1 tablespoon butter
Salt and ground black pepper

Heat the oil in a medium skillet over medium-high heat. Add the garlic and cook for 1 minute. Add the rice and cook for 1 minute, until just starting to toast, stirring frequently. Add the broth, 1 tablespoon of the lime juice and 1/2 teaspoon of the lime zest and bring to a boil. Reduce the heat to low, cover and cook for 15 to 20 minutes, until the liquid is absorbed and the rice is tender.
Fold in the basil and butter. Season to taste with salt and pepper.
