Cheesy Chicken Quesadilla Bites

These hand-held treats are incredible! Just like traditional quesadillas, they're loaded with chicken and cheese - but unlike traditional quesadillas, they're dusted with taco seasoning and small enough to devour in 2 bites.

I made these as an after-school snack, and it was a great way for me to use up leftover chicken, cheese and quesadillas. But you can plan ahead and make them as an appetizer for parties or a main dish for your family. 

Use up those leftovers!: Since this recipe calls for cooked chicken, it's a way to use up leftover chicken. Leftover chicken and shrimp would be great too. No leftovers? No problem, use shredded or diced rotisserie chicken or cooked chicken from the salad bar or deli. 


Cheesy Chicken Quesadilla Bites

6 small (fajita-size) soft flour tortillas
1 1/2 teaspoons taco seasoning, divided
1/2 cup shredded cheddar cheese

1 cup cubed cooked chicken
1/2 cup shredded mozzarella cheese
Olive oil or olive oil cooking spray
1 cup salsa or picante sauce for serving

Preheat the oven to 375 degrees. Line a baking pan with parchment paper or coat with cooking spray.
Use a biscuit cutter to cut 4 circles from each tortilla.
Arrange half of the rounds on the baking pan. Sprinkle each round with taco seasoning. Top each round with about 1 tablespoon of the cheddar cheese and then the chicken. Top with about 1 tablespoon of the mozzarella cheese. 

Top with the second tortilla round. Coat the top rounds with olive oil or cooking spray and season with taco seasoning.
Bake for 8 to 10 minutes, until the cheese melts and the tortillas are golden brown.
Serve the quesadilla bites with salsa on the side for dunking.
