Garlic Butter Roasted Green Beans with Fried Onions

I love this super simple side dish - it's crammed with the flavor of garlic and onion, and the combination of blanching and roasting creates green beans with the perfect balance of "bite" and caramelization.

Garlic Butter Roasted Green Beans with Fried Onions

1 pound greens beans, ends trimmed
2 tablespoons butter
1 teaspoon dried minced garlic (not garlic powder; minced garlic is actual little garlic bits and it's sold next to the garlic powder and garlic salt)
Salt and ground black pepper
1/4 cup fried onions

Preheat the oven to 425 degrees. Line a large baking sheet with parchment paper.
Bring a large pot of water to a boil over high heat. Add the green beans and blanch for 2 minutes. Drain.
Add the butter to the same pan over low heat. When the butter is foamy, add the garlic and cook for 30 seconds. Return the green beans to the pot and toss to coat with the butter and garlic.
Transfer the green beans to the prepared pan and season with salt and pepper.
Roast for 10 minutes, until the green beans just start to turn golden brown.
Transfer to a serving plate and top with the fried onions.
