Baked Parmesan Chicken Nuggets with Marinara

Golden brown chicken bites, laced with nutty parmesan cheese and dunked in warm marinara sauce. The best part is, the oven does the work, so there's no messy cleanup from pan-frying.

Baked Parmesan Chicken Nuggets with Marinara

Cooking spray
1/4 cup all-purpose flour
Salt and ground black pepper
2 eggs, lightly beaten
1/2 cup good-quality parmesan cheese (choose a good cheese, when you use a handful of ingredients, you need good ones)
1 pound boneless skinless chicken breasts, cut into bite-size pieces
1 cup marinara sauce, warmed

Preheat the oven to 400 degrees. Line a large baking sheet with parchment paper or coat with cooking spray.
Place the flour in a shallow dish and season with a little salt and pepper. Mix to combine. Place the eggs in a shallow dish, and the parmesan cheese in a third shallow dish. Dip the chicken pieces in the flour and turn to coat. Shake off the excess flour and transfer the chicken to the eggs. Turn to coat, shake off excess egg and transfer the chicken to the parmesan cheese. Turn to coat.
Transfer the chicken pieces to the baking sheet, without the pieces touching (this ensures golden brown edges on all sides). Spray the chicken with cooking spray.
Bake for 25 minutes, until the cheese is golden and the chicken is cooked through.
Serve the chicken with the marinara sauce on the side for dipping.
