Funfetti Poke Cake with Mocha Latte Pudding

Let's face it, those coffee concoctions (loaded up with chocolate, caramel, whipped cream, and sprinkles) are incredibly popular. That got me thinking...

Funfetti cake is basically a vanilla cake, with little bits of candy sprinkled in. Stay with me here... There's no question most people adore the combination of vanilla, chocolate and coffee (I go back to the success of swanky coffee drinks...). Voila! The Funfetti poke cake - poked with mocha latte pudding - was born!

About the Mocha Latte pudding: I discovered Cafe Breaks Mocha Latte pudding cups while perusing the pudding section of my grocery store. They also have a caramel, vanilla and chai lattes that would be equally amazing in this cake.

Not in a coffee mood (or want to make this cake for the little folks in the house)? Choose any pudding variety you like - chocolate, lemon, vanilla, caramel, butterscotch; anything works. You'll need 4 pudding cups to fill and cover the cake.

Funfetti Poke Cake with Mocha Latte Pudding

Cooking spray
1 Funfetti boxed cake mix (18.9 ounces)
1 cup water or milk
1/2 cup oil or melted butter
3 large eggs
4 mocha latte pudding cups (or chocolate pudding, lemon pudding, etc.).
Whipped cream for serving
Colored sprinkles for serving

Preheat the oven to 350 degrees. Coat a 9x13-inch baking pan with cooking spray.
In a large mixing bowl, combine the cake mix, water, oil, and eggs. Beat on medium speed for 2 minutes, scraping down the sides of the bowl as necessary.
Pour the batter into the prepared pan and bake for 25 to 30 minutes, until a wooden pick inserted near the center comes out clean or with little bits of cake clinging to it.
Cool completely on a wire rack.
Once the cake is cool, use the bottom of a wooden spatula, like this...
Poke holes all over the cake, almost through to the bottom, without touching the bottom. 
Spread all four pudding cups over the cake, allowing the pudding to fill the holes.
Slice the cake into squares and top with whipped cream and sprinkles.
Makes 1 cake (24 servings)
