Easy Strawberry Quick Bread with Strawberry Glaze

A simple quick bread bursting with the flavor of strawberry preserves in every bite.

What a fun and delicious way to enjoy fruit preserves. And, as much as I love fresh produce, this sweet, moist bread doesn't require any ripe fruit. That means, you can enjoy this treat year round, with whatever fruit preserve you have on hand. I chose strawberry because that's what I had in the fridge; use what you have to create any version you want. Raspberry, blueberry, cherry, and lingonberry would make fantastic quick breads too. One suggestion - use seedless preserves!

More preserves in the glaze! The sweet glaze for this quick bread also boasts the flavor of strawberry preserves. When you make the glaze for YOUR bread, use the preserves you used in the batter.

Why did I use evaporated milk? Because I think it yields a richer flavor. Don't worry if you don't have a can in the pantry; regular milk works too.

Want to freeze it? No problem - this bread freezes beautifully. Wrap it tightly in plastic wrap and then foil and freeze for up to 3 months.

Easy Strawberry Quick Bread with Strawberry Glaze

Cooking spray
2 cups all-purpose flour
2 teaspoons baking powder
1/4 teaspoon salt
3/4 cup granulated sugar
1/2 cup evaporated milk or regular milk
1/2 cup oil
1 large egg
1 teaspoon vanilla extract
1 cup seedless strawberry preserves
For the glaze: 
2 cups powdered sugar
1/4 cup seedless strawberry preserves
2 tablespoons evaporated milk or regular milk

Preheat the oven to 350 degrees. Coat an 8-inch loaf pan with cooking spray.
In a medium bowl, combine the flour, baking powder, and salt. Mix well and set aside.
In a large bowl, whisk together the sugar, milk, oil, egg, and vanilla. Whisk in the flour mixture. Fold in the preserves until blended. Pour the mixture into the prepared loaf pan and bake for 50 to 60 minutes, until a wooden pick inserted near the center comes out clean, or with little bits of bread clinging to it. Cool completely on a wire rack.
To make the glaze, whisk together all the ingredients until smooth. Once the quick bread is completely cool, spread the glaze over top. Slice and serve.

Makes 1 loaf (about 8 servings)
