Pepperoni Pizza Pockets

Frozen dinner rolls to rescue again! I just can't seem to serve them the normal way. This time, I thawed them according to the package directions (3 hours on the counter), then pressed them into circles before topping with marinara sauce, pepperoni and mozzarella. Then I folded and pressed them into half-moons (like mini calzones), brushed them with olive oil and sprinkled them with parmesan cheese. In just 15 minutes, they baked up to handheld perfection!

Want to prep ahead? If you want to make these in advance, assemble them as directed below, cover with plastic and refrigerate up to 24 hours. When you're ready to bake, pull them from the refrigerator about 15 to 20 minutes before baking - about the time it takes for your oven to preheat. Oh, and remove that plastic before baking...

Make as many as you want: I used 8 dinner rolls to create 8 pockets. Clearly you can make a gazillion of these to serve a parties.

Pepperoni Pizza Pockets

8 frozen dinner rolls, thawed according to package directions
8 teaspoons marinara or pasta sauce
8 slices pepperoni
8 tablespoons shredded mozzarella cheese
1 tablespoon olive oil
1 tablespoon grated parmesan cheese

Preheat the oven to 375 degrees. Line a baking sheet with parchment paper or foil.
Press the dinner rolls out into circles, about 1/4-inch thick. Top each circle with 1 teaspoon of the marinara sauce and spread the sauce to within 1/2-inch of the edges. Top each circle with 1 slice of pepperoni and 1 tablespoon of the mozzarella.

Fold over and pinch the edges together to seal.

Transfer the pockets to the prepared pan and brush with olive oil. Sprinkle with the parmesan cheese. 
Bake for 15 to 20 minutes, until puffed up and golden brown.
Makes 8 pockets (serves 4)
