Yay! It's corn on the cob season! Cob corn is one of my favorite foods - sweet and fun to eat. This method of quickly blanching and then grilling the corn locks in sweetness and creates perfectly cooked kernels that are packed with juicy flavor. For the butter, it's a quick and easy combination of softened butter and chopped chipotle chilies in adobo sauce. You decide how hot to make the butter by how many chipotle chilies you add!
Grilled Corn with Chipotle Butter
8 ears cob corn, shucked
4 tablespoons butter, softened
2 chipotle chilies in adobo sauce, finely chopped (add more for a spicier butter)
Cooking spray
Salt and ground black pepper
Bring a large pot of water to a boil over high heat. Add the corn and blanch for 5 minutes. Drain and set aside.
In a small bowl, combine the butter and chipotle chilies. Mix well.
Coat a stovetop grill pan with cooking spray and preheat to medium-high. Add the corn to the hot pan and grill for 3 to 5 minutes, just until you get grill marks. Season the corn with salt and pepper.
Serve the corn with the chipotle butter.
