Garlic Mozzarella Coins

This isn't really a recipe, more like a few instructions to get you (quickly) to the part where you can enjoy a tasty snack, appetizer or side dish! Melted mozzarella and garlic are naturally awesome together - but tucked inside bite-size, toasted tortillas? It rarely gets better with such simplicity! Oh, and the best part is how the tortillas puff up as they bake, making the "coins" super fluffy and cheesy at the same time. Can food be fluffy? You get the point...

I served these alongside my Spaghetti and Meatballs Cups... Perfect combination.

About the ingredients: I didn't give exact quantities because you really don't need them. Plus, tortillas range in size, so you might get 3 circles out of the fajita-size tortillas and 6 out of the burrito-size.

Garlic Mozzarella Coins

Flour tortillas
Garlic powder
Shredded mozzarella cheese
Olive oil or olive oil cooking spray
Salt and freshly ground black pepper
Marinara sauce or salsa for dipping, optional

Preheat the oven to 375 degrees. Line a baking pan with parchment paper or coat with cooking spray.
Use a small biscuit cutter to cut circles from the tortillas (use the edges of each tortilla as part of the circle so you can maximize the tortilla and prevent waste).
Arrange half of the circles on the baking pan. Sprinkle each circle with garlic powder. Top each circle with about 1 tablespoon of the cheese. Top with a second circle. Brush the tops with olive oil or spray with cooking spray. Season the tops with salt and pepper.
Bake for 5 to 7 minutes, until puffed up and golden brown.
Serve alone or with warm marinara sauce or chilled salsa.

Makes as many as you want! One suggestion: make a LOT, they go fast.
