Chocolate Chip Cookie Dough Bites (vegan and no bake!)

Are you a cookie dough enthusiast? Then step right up! These heavenly bites are sweet, chocolatey and boast little flecks of oatmeal. They seriously taste like chocolate chip cookie dough, but there's no dairy or eggs! And they're guilt-free too - I used healthy coconut oil instead of butter, pure maple syrup instead of refined sugar, and I added oats for their wholesome goodness.

About last night: Last night, I brought a big batch of these to my son's track meet (remember, they're guilt-free). It was amazing to watch the team's reaction (and the parents and coaches too). I knew I nailed it with this one. One coach actually rolled his head back, as if he was enjoying the best thing ever. Pure bliss on the palate. That makes me feel good; not gonna lie.

Because these were such a hit, next time I'll try adding a little peanut butter. And maybe cocoa powder...

Chocolate Chip Cookie Dough Bites (vegan and no bake!)

1/2 cup coconut oil, melted
1/2 cup pure maple syrup
2 teaspoons vanilla extract
1 cup all-purpose flour, or oat flour for gluten-free bites
1 cup quick-cooking oats
Pinch of salt
1/4 cup mini semisweet chocolate chips (for truly vegan bites, opt for vegan chips)

In a large bowl, whisk together the melted coconut oil, maple syrup and vanilla. Whisk in the flour and salt. Fold in the oats and chocolate.
Place the bowl in the refrigerator to chill for 20 minutes.
Shape the batter into 25 to 30 balls. If the dough has firmed up too much, scoop it out with a melon baller or small spoon into your hand and start rolling. The warmth of your hands will soften the dough in seconds.
Keep chilled until ready to serve.
Makes 25 to 30 balls
