Looking for a last minute snack or appetizer? If you have a bag of corn tortillas, cooking spray, Mexican seasoning, and cheddar, you've got everything you need to pull this together. Oh, and if you want to serve the chips with salsa, bean dip or guacamole, just pull that out too.
Seasoned Tortilla Chips with Cheddar
Note: This recipe makes 12 large chips (each chip is one corn tortilla). You can easily double or triple the recipe.
12 corn tortillas
Cooking spray
2 teaspoons Mexican spice blend
1/3 cup shredded cheddar cheese
Preheat the oven to 400 degrees.
Arrange the tortillas on a baking sheet and spray with cooking spray. Season with the Mexican seasoning. Bake for 10 minutes, until crisp.
Sprinkle the cheese over top and bake for 1 to 2 more minutes, until the cheese melts.
