Another day, another protein ball invention. Luke has a big track meet today, so I'm gearing up with healthy fuel. Actually, Kyle had a huge meet last night, so these are will be great for his recovery.

And these balls are even more powerful because I added dried tart cherries, which are brimming with vitamin C and antioxidants.
Pretzel-Tart Cherry Balls with Peanut Butter and Chocolate
1 cup oats, regular or instant
1 cup pretzel pieces
1 cup dried tart cherries or regular dried cherries (cranberries work too)
1/3 cup peanut butter, preferably all natural
2 tablespoons honey
2 tablespoons peanut butter powder (I used the chocolate variety)
3 tablespoons water, plus more as needed
1/2 teaspoon vanilla
1/3 cup mini semi-sweet chocolate chips
In a food processor, combine the oats, pretzels, cherries, peanut butter, honey, peanut butter powder, water, and vanilla. Process until the mixture comes together (so you can shape it into balls), adding a little more water if necessary.
Add the chocolate chips and pulse to combine.
Shape the mixture into 24 balls and place on a parchment-lined baking pan. Refrigerate 30 minutes. Now they're ready to fuel and replenish those you love!
