Don't ditch those last few slices of bread! Even if they're stale. In fact, the more stale the better. Simply roll the bread thin, top with sauce and cheese, and you've created an excellent side dish. I served these last night, next to my Chicken Noodle Soup. Happy faces all around.
Note: I had four slices of bread left, so the recipe calls for 4 slices. Make as many as you need.
Pizza Rolls
4 slices bread, any bread (whole wheat, white, artisan, etc.)
4 tablespoons pizza sauce or marinara sauce
4 ounces mozzarella cheese
Cooking spray
2 tablespoons grated parmesan cheese
Preheat the oven to 400 degrees.
Place the bread slices on a flat surface. Use a rolling pin to roll them out flat, about 1/4-inch thick. Spread the sauce all over the slices and top with the cheese. Roll up tightly (don't worry if some of the sauce seeps through the bread - that's the point!).
Spray the top with cooking spray and then sprinkle the parmesan cheese over top.
Bake for 5 to 10 minutes, until the bread is golden and the cheese melts.
