Oven-Roasted Broccoli and Lemon with Parmesan

I serve broccoli at least 3 nights per week. The boys and I love it, and it's ALWAYS devoured. No matter how it's prepared. I often steam it, but I still constantly look for new ways to prepare this amazing vegetable.

That said, since it's a side dish, I don't want to get too crazy. This recipe is so simple, it's embarrassing. But sometimes simple is all you need. The trick is good-quality ingredients (namely the olive oil and parmesan cheese), and fresh lemon. The oven does the rest. It even caramelizes the lemon.

Oven-Roasted Broccoli and Lemon with Parmesan and Lemon

Cooking spray, preferably olive oil
4 cups fresh broccoli florets
Salt and black pepper
1 lemon, sliced into rounds
2 tablespoons olive oil
2 tablespoons grated parmesan cheese

Preheat the oven to 400 degrees. Coat a baking pan with cooking spray or parchment paper.
Arrange the broccoli on the prepared pan and spray with cooking spray. Season with salt and pepper. Arrange the lemons alongside.
Roast for 20 minutes, until the tips of the broccoli florets are golden brown, and the lemon is golden brown.
Transfer the broccoli and lemon to a bowl and immediately toss with the olive oil and parmesan.
