With a little Luck of the Irish, you can enjoy these too! In less than 30 minutes! We adore brownies in my house, and I'm constantly making variations on the theme - vegan, white, tan, loaded with goodies, and more. This time, in celebration of St. Patrick's Day, I spiked the batter with a little espresso and whiskey!
The brownies remind me of the Irish coffee my dad used to serve every Christmas. He is (was) Italian, not Irish, but it was tradition! Great memories.
Irish Coffee Brownie Bites
Cooking spray
1 cup all-purpose flour
1 cup granulated sugar
1/4 cup plus 1 tablespoon unsweetened cocoa
2 teaspoons instant espresso granules
1/2 teaspoon baking soda
1/8 teaspoon salt
6 tablespoons butter, melted
1-2 tablespoons whiskey
1 large egg, slightly beaten
1 teaspoon vanilla
Preheat the oven to 350 degrees. Coat 2 mini muffin pans with cooking spray.
In a large bowl, combine the flour, sugar, cocoa, espresso, baking soda, and salt. Whisk to combine. Add the butter, whiskey, egg, and vanilla and mix until blended.
Roll the dough into 20 balls and place the balls in the prepared pans (4 cups will be empty). Press down gently.
They will look like this:
Bake for 12 to 15 minutes, until the brownies sink in the middle and a wooden pick comes out clean.
Cool on a rack before removing the brownies from the pan.
